Baked chicken didnt turn out, help!?
I made baked chicken with carrots, potatoes and onions for dinner. I baked it covered in the oven for about an hour at 375. The flavor came out fine but the chicken came out a little dry and the carrots were not as soft as I would like. Do I simply cook it longer!? Did I need to put broth or something in the pan as well!? Any advice would be great! Thank You!

if you have chicken stock add a bit to it and bake it a little longer add some spices to give the chicken and the vegetables a bit of a zing , if you don't add the liquid them meat and vegetables will be dry and not very pleasant to eat, cover the pot while cooking , the steam will soften the carrots.

carrots should be boiled for awhile before adding to the roast pan. You can try cooking the bird upside down so the fat bastes the meat making it juicier. You also might rub some olive oil on the skin of the bird before baking. Covering the chicken with foil for the first half hour would also make it more juicy and tender.

I roast chicken at 350 for 1 hour uncovered and it turns out moist - here is my secret. I but butter under the breast skin to keep the meat moist. I would cook the potatoes and carrots separate. And you don't need broth, just lower the temp to 350 and you will be fine.

You have to add some kind of liquid, chicken both, water, wine, can of soup mixed with a can of water, etc. What is in the pan you can thicken for gravy.
