Absinthe has been legally produced in and sold all over the U.S. since 2007, but the absinthe fad quickly died off when Marilyn Manson stopped being cool. Hardly any bars carry it - I have never seen it served in Vegas.
The myth of Absinthe being some kind of illicit magic hallucinatory potion favored by exotic and mysterious people was just that - a myth.
Absinthe is just another distilled liquor that gets you drunk, but it's not widely served because most people agree it tastes like s**t compared to vodka, rum, tequila, etc.

They serve just about everything in Vegas. They don't call that place sin city without reason.
The only real restrictions are federal laws.
