My cake crumbles when baked? :(?

Lately, when I've been making cakes, it looks cooked on top and I leave it to cool but it sticks to the pan :(
What am I doing wrong?

I usually take it out of the pan and place it on a plate or cooling rack before it cools ( be careful not to burn your self).Other wise it is probably sticking because you are leaving it in the pan to cool! You can either use wax paper to line the pan to keep it from sticking are you using shorting or non stick spray on the pan before you pour the batter in? run a knife around the outside edge of the pan invert it all at once and gently tap the bottom while the cake is laying on the counter, rack or plate. Also do the tooth pick trick . When you think it is done push a tooth pick (or butter knife) into the very center of the cake. If it comes out clean the cake is done! I really hope I helped. It was harder to explain that i thought. I could show you better ! lol Good luck! And remember Rome wasn't built in a day..It took me years to prefect many baking and cooking techniques. Keep trying and you will eventually get it!

Did you grease your pan first- like with Crisco or Pam spray? In addition to greasing the pan, I like to also line the bottom of the pan with wax paper- then it comes out easier. Also, once it comes out of the oven you need to put it on a cooling rack to cool, otherwise it continues to cook in the pan until the pan cools off which can cause it to be over baked. Is it dry and crumbly? If so, then you'd need more liquid when you're making the batter.

Your pan might be faulty:
1)It is lightly colored-light colored pans make for uneven browning.
2)Your oven temperature is too hot-turn it down 25 degrees
You can also help by:
1)Use a knife and cut the sides of the cake away from the pan when it comes out
2)Use nonstick cooking spray

make sure you grease and lightly flour the sides and bottom of your pan before you pour your batter in it - bake it on the middle rack of your oven and bake it for the minimum number of minutes called for in your recipe- check for doneness by sticking a toothpick in the center (if it comes out clean it's done if not leave it in a few more minutes but don't over bake)
