High protein meat cookie recipe anyone? HELP!?

OK I know this is probably the strangest question asked but I want to make a high protein cookie. A cookie with chicken, turkey or lots of eggs. so they have a higher protein content.

And I need a recipe to try. Can anyone help devise a recipe that's not just peanut butter which is the only high protein recipe for cookies I know.

The reason: my 2 year old Son is going through a very fussy eating stage. Will eat crunchy things or crispbreads or cookies. I have mage lots of veggi cookies but I want him to have more protein in his diet as he is eating a lot os carbs at the moment. He is not fat but he is very tall for his age 94ck @ 2.4 so he's going to be tall.

Can anyone suggest a recipe that has los of eggs in it for cookies or cakes or a daring mix with meat/chicken etc in it.

No silly suggestions please as it has to be safe for my Son to eat.

    Not all are cookies, but all are high protein and may appeal to your son.

    Baked Mozzarella Sticks

    12 oz Cheese, mozzarella, string, sticks, reduced fat, low moisture

    1 eggs

    1 tsp dry italian seasoning

    4 oz Bread Crumbs, white, very low sodium (or panko)

    1/2 cup Sauce, pasta, marinara , warmed (optional)

    1 Position rack in upper third of oven and preheat oven to 350 degrees F. Line a baking sheet with foil and spray lightly with cooking spray.

    2 Remove cheese from packaging and set aside. In a small bowl, whisk egg until foamy. In small non-stick skillet, mix Italian seasoning with bread crumbs and place over medium heat. Cook and stir bread crumbs until lightly browned, about 5 minutes.

    3 Dip one piece of string cheese in egg until coated and then into toasted bread crumbs, coating completely. Redip the string cheese in egg and again into the bread crumbs, if desired. Place on baking sheet. Repeat with remaining string cheese and place on baking sheet 1 1/2 inches apart. Spray string cheese lightly with cooking spray.

    4 Bake 5-6 minutes or until heated through.

    Nachos

    1 lb extra lean ground beef (5% fat)

    1 1/2 tsp ground cumin

    1 tsp chili powder

    15 oz low sodium canned black beans , rinsed and drained

    10 oz Chips, tortilla, blue corn , divided

    1 cup Cheese, Mexican, four cheese, finely shredded , divided

    1 cup romaine lettuce , shredded and divided

    8 oz fresh tomatoes , chopped and divided

    1/4 cup fresh chopped green onion

    1 tsp fresh cilantro , chopped

    4 oz Olives, black, jumbo, canned , sliced

    1 cup Salsa

    1 Brown the beef, cumin, and chili powder in a large skillet over medium-high heat for 5-10 minutes, stirring constantly. Drain.

    2 Stir in the beans and cook until thoroughly heated.

    3 Layer half the tortilla chips, 1/2 cup beef mixture, 1/2 cup cheese, 1/2 cup lettuce, and 1/2 cup tomato on a large platter. Repeat with the remaining ingredients.

    4 If desired, garnish with green onions, cilantro, olives, salsa, and sour cream

    High-Energy Muffins

    30 oz red kidney beans, canned and drained (2 cans)

    1/3 cup fat free milk

    4 tbsp margarine , softened

    3/4 cup packed light brown sugar

    3 eggs

    1 tsp vanilla extract

    1 cup white all purpose flour

    1/2 cup whole wheat flour

    1 tsp baking soda

    1/2 tsp salt

    1 tsp ground cinnamon

    1/2 tsp ground allspice

    1/4 tsp ground nutmeg

    1/4 tsp ground mace

    3/4 cup seedless raisins

    1/2 cup packed light brown sugar

    2 tbsp quick cooking rolled oats

    2 tbsp white all purpose flour

    1/4 tsp ground cinnamon

    2 tbsp margarine , cut into pieces (cold)

    Preheat oven to 375 degrees F.

    2 Using a food processor or blender, puree beans and milk until smooth.

    3 Using electric beaters, mix margarine, brown sugar, eggs, and vanilla until smooth.

    4 Combine egg mixture with bean mixture. Mix flours with baking soda, salt, and spices. Stir flour into bean mixture. Add in raisins.

    5 Spoon mixture into 24 cooking spray coated muffin tins.

    6 For Cinnamon Streusel. Mix brown sugar, oats, flour, and cinnamon. Cut in margarine to form a crumb.

    7 Top mixture with Cinnamon Streusel. Bake 20 to 25 minutes.

    Other suggestions would be to make sandwich type cookies (like oreo's) using a protein filling such as tuna, peanut butter, eggs and cheese. Protein comes in many forms. Hell take a tortilla wrap, put spainsh rice, refired beans, and taco meat in it, roll it, then bake it until crisp. Worth a try. Good luck.

    You can make some really delicious smoothies with milk, Greek yogurt (which is high in protein), and any fruits that you like. You can even add protein powder that they sell in health food sections. You could make a peanut butter and banana smoothie-it is my favorite! You can make peanut butter/chocolate smoothies too. You can just eat lots of yogurt too. Other things you can do with peanut butter are grilled peanut butter and honey or jelly sandwiches. Or peanut butter and banana. Or you can mix it in oatmeal, which is pretty tasty! You can make different kind of soups with beans and lentils, which are really good for you and packed with protein. You can make a Latin inspired pureed black bean soup and add in some tortillas which will soften and add some texture. You can do lots of thins with eggs. Omelets, hard boiled (makes great egg salad sandwiches), breakfast burritos, or a good cheesy scramble. You can also make a southwestern egg bowl with black beans, eggs, cheese, rice, veggies, etc. I hope this gives you a few new ideas!

    My advice is to stop catering to him with these cookies. If he gets hungry enough he'll eat meat. In the meantime don't make yourself crazy trying to get the protein into him. Eggs and peanut butter are good sources. If he likes everything else, like veggies and fruit, he'll be fine. Don't forget about the protein in fish as well. Put some tuna or salmon salad on crackers for him and see if he likes that. He'll get over it, believe me.
