Why does the climate control in my 2006 Ford Freestyle jump from 60F (16C) to 65F (19C)? What if I want 63F?

I find that I am too cold and 60 and too warm at 65. Also, why does the A/C go on in "auto" when it's colder outside than I have it set at?

Update:

Edit-OK, I found out that the Auto is smart enough to use the A/C to reduce humidity for comfort AND to reduce defogging time. Still, I can't find the temperature that works for me :(

All it really looks at for AUTO setting is interior temp and it try's to get to the desired temp as fast as possible. If you don't want it to run a/c don't use AUTO. Personally I don't like AUTO temp control and I agree that it would be nice to be able to select 61, 62, 63, and 64 degrees. I think I would also like 63F.
