A great way to use up some zucchini is to throw in some chopped pieces at the very end of cooking pasta (like when 2-3 minutes are left). Cover the whole thing with sauce and enjoy.

Hey here is an easy recipe:
Ingredients:
2 pounds zucchini, trimmed and cut into 1-inch chunks
1 tablespoon extra-virgin olive oil
2 tablespoons prepared pesto
Salt to taste
Freshly ground pepper to taste
How to prepare:
Place a baking sheet on the middle rack of the oven. Preheat oven to 500 degrees F.
Toss zucchini with oil in a large bowl. Spread the zucchini on the preheated baking sheet in a single layer. Roast until beginning to brown, 5 to 7 minutes. Turn the zucchini and continue roasting until just tender, 7 to 9 minutes more. Return the zucchini to the bowl. Add pesto, salt and pepper; toss to coat.
this serves up to four people!

Zucchini Cupcakes 1 1/2-2 dozen
3 eggs
1 1/3 cups sugar
1/2 cup vegtable oil
1/2 cup orange juice
1 teaspoon almond extract
2 1/2 cups flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cloves
1 1/2 cups zucchini
In a bowl beat eggs, sugar, oil, orange juice and extract. Combine dry ingreients add to the egg mixture and mix well. Add zucchini and mix well. Fill greased or paper lined muffin cups two thirds full. Bake at 350
5 for 20-25 minutes or until cupcakes test done. Cool for 10 minutes befoe removing to a wire rack.

Easy, Cheesy Zucchini Bake
Perfect for a fast weekday meal. It's healthy, delicious, even low-carb. And so simple! Zucchini baked with spaghetti sauce, ground turkey, corn, and smothered with cheese. Try it with a can of diced tomatoes added to the sauce.
INGREDITIONS:
1 pound ground turkey
2 large zucchini, halved lengthwise
3 cups spaghetti sauce
1 (8.75 ounce) can whole kernel corn, drained
1 cup shredded Mexican cheese blend
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Brown turkey in a large skillet over medium heat. Drain fat.
Place halved zucchini slices in a baking dish. Pour the ground turkey, spaghetti sauce, and corn on top. Cover with aluminum foil.
Bake in preheated oven until zucchini are tender, about 20 to 25 minutes. Uncover, and sprinkle with cheese. Bake, uncovered, about 5 minutes.

dice about 2 to 3 cups zucchini, add salt pepper and garlic powder to it and toss well. stir in 1 can mushroom pieces, drained or 1/2 to 1 cup sliced fresh mushrooms. Put a little butter on top. wrap in aluminum foil and toss on the grill for 30 minutes or put in oven at 350F for about 30 minutes.
My daughter did this with yellow crookneck on the grill the other night and it was totally fabulous! any kind of squash is good done this way.

Zucchini with Tomato Sauce 2 T vegetable oil a million/2 c onion, finely chopped a million clove garlic, finely chopped a million/2 c celery chopped a million 6 ounce can tomato paste a million /2 t salt 3/4 c Dr Pepper a million/4 t black pepper 4 c zucchini, sliced a million/8" thick warmth oil in saucepan. upload onions and garlic and cook dinner until somewhat browned. upload celery, tomato paste, Dr Pepper, salt and pepper. Simmer, lined, for 10 minutes. upload squash. Simmer approximately 20 minutes uncovered. Yield 6-8 servings.

Balsamic vinaigrette dressing is a wonderful marinade for zucchini!
Let it marinate about five to ten mins then place on grill. Cook until brown on both sides (about four mins both sides).
It's a favorite at my house!

Zucchini Saute
INGREDIENTS
1 tablespoon olive oil
1/2 red onion, diced
salt and pepper to taste
4 zucchini, halved and sliced
1/2 pound fresh mushrooms, sliced
1 tomato, diced
1 clove garlic, minced
1 teaspoon Italian seasoning
DIRECTIONS
Heat oil in a large skillet over medium heat. Saute onion with salt and pepper for 2 minutes. Stir in zucchini and mushrooms. When zucchini begins to soften, add tomatoes, garlic and Italian seasoning. Cook until heated through.
Zucchini Corn Saute
INGREDIENTS
4 1/2 cups sliced zucchini (1/4 inch thick)
1/4 cup diced onion
1 tablespoon olive or canola oil
1 1/2 cups fresh or frozen corn, thawed
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon pepper
DIRECTIONS
In a nonstick skillet, saute zucchini and onion in oil for 4-5 minutes. Stir in corn; saute 2 minutes longer or until vegetables are tender. Sprinkle with salt, cumin and pepper.
Colorful Zucchini Spears
INGREDIENTS
4 slice bacon, cut into 1 inch pieces
2 medium zucchini
1/2 teaspoon salt
1 teaspoon dried basil
2 teaspoon garlic powder
1/8 teaspoon pepper
3 plum tomato, halved and sliced
1/2 sliced onion
1/4 cup shredded sharp Cheddar cheese
DIRECTIONS
In a small nonstick skillet, cook bacon over medium heat until cooked but not crisp. Using a slotted spoon, remove bacon to paper towels to drain. Cut zucchini in half widthwise; cut halves lengthwise into quarters. Place in an ungreased shallow 1-qt. baking dish.
Combine the salt, basil, garlic powder and pepper; sprinkle half over the zucchini. Top with tomato, onion, remaining seasonings and bacon. Bake, uncovered, at 350 degrees F for 15 minutes. Sprinkle with cheese; bake 5-10 minutes longer or until zucchini is tender.
Grilled Greek-Style Zucchini
INGREDIENTS
4 small zucchini, thinly sliced
1 medium tomato, seeded and chopped
1/4 cup pitted ripe olives, halved
2 tablespoons chopped green onion
4 teaspoons olive or canola oil
2 teaspoons lemon juice
1 teaspoon dried oregano
3 teaspoon garlic powder
1/2 teaspoon pepper
2 tablespoons grated Parmesan cheese
DIRECTIONS
In a bowl, combine the zucchini, tomato, olives and onion. Combine oil, lemon juice, oregano, garlic salt and pepper; pour over vegetables and toss to coat. Place on a double thickness of heavy-duty foil (about 23 in. x 18 in.). Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 10-15 minutes or until vegetables are tender. Sprinkle with Parmesan cheese.
