Rossi vs the clock, at Phillip Island winning by 15 secs after being given a 10 sec penalty for overtaking under a yellow flag.
Rossi vs Elias at Estoril
Rossi vs Stoner at Laguna
Rossi vs Capirossi vs Biaggi at Mugello
Rossi vs Lorenzo at Catalunya

Rossi said the race in Catalunya was his hardest race so far, I agree with him on that.
Rossi vs Gibernau @ Jerez was also a good one but I felt sorry for Gibernau because Rossi wasn't 100% fair and riding really reckless the last couple of laps.
Same like Simoncelli vs Bautista now in the 250s, it's fun for us to watch but if I was a racer I would be very furious if I got bashed of my bike by a reckless Italian.

For me ~ I'll go with Catulunya :-)
Edit
I forgot to put in, that Rossi went past my flat during The TT's this year ~ I wished I could have slowed time when he passed ~ I felt like a kid on Christmans day :-) I was so excited ~

Jerez when Rossi nerfed Gibernau off the track. As Niall McKenzie said after a run in with team mate Hislop. "We know the rules now"

[ I think the Catalunya race was his best, do you think Valentino learnt something more than he already knew about bravery, from his visit earlier in the week to the Isle Of Man TT watching John McGuinness and the boys...
I would have to put any of his battles with Max Biaggi next, as i think he had a real fear of Max's talent...more so than with Stoner or Lorenzo, they did come too blows on more than one occassion...<^><...

Agree with the first three on your list. I don't remember the old races very well, but I do recall some great battles with Biaggi.
