CHINESE CURRY CHICKEN
4 tbsp. vegetable oil
4 cloves garlic, crushed
3 med. onions, sliced lengthwise
2 lg. chicken breasts, boned and cut in 2 inch pieces
1 tbsp. curry powder
1 tbsp. sugar
2 tsp. salt
2 tbsp. soy sauce
1/2 c. water
3 med. potatoes, cubed
1 tbsp. cornstarch mixed with
1 tbsp. water
Heat 2 tablespoons oil in heavy pot over high heat, about 30 seconds. Add garlic; fry until brown. Add onions; stir fry 3 minutes. Remove onions and set aside.
Heat remaining oil in pot. Add chicken and curry powder. Stir fry 3 minutes. Add sugar, salt, soy sauce and water. Mix in potatoes. Bring mixture to a boil. Reduce heat and cover. Simmer 20 minutes.
Mix in onions. Cover and simmer 10 minutes longer. Stir cornstarch and water mixture into chicken. Boil 1 minute or until thick.

chinese chilli chicken recipe:
Ingredients:
Chicken pieces - diced breast pieces
2 tbsp soya sauce
1 tbsp garlic paste
1 tbsp ginger paste
1 egg
1 tsps cornflour
2 spring onions
2 cups of chicken stock
4-5 green chillies - cut diagonally
vegetable oil
salt
pepper powder
Method:
Step 1: Marinate chicken pieces in 1tbsp soya sauce, 1 tsps cornflour, 1 egg, and salt for 10-15 mins.
Step 2: Fry the marinated chicken pieces and keep them aside.
Step 3: In a pan, pour some oil.
Step 4: put white spring onion portion, green chillies, ginger paste and garlic paste. Cook for 2 mins
Step 5: pour soya sauce, chicken stock, and boil.
Step 6: when it is boiled, add the fried chicken pieces, pepper powder, and cook togetehr for 3 mins
Step 7: garnish wtih the green spring onion tops and serve.

Vegetable is not just a clinical term, it is a cooking term. So the qualifications as a vegetable are not very coherent, which is why we have cases like the tomato: people argue both ways.
