Recipes to make in a college dorm?
I like to eat healthy, and I like a variety of foods. I will be starting college in September and even though I am not allowed to, I will be bringing a griddle that can be plugged in--in order to cook fried eggs, omelets, chicken, vegetable stir fry, etc. I will also have a microwave and a fridge. Are there any recipes that are easy, affordable, and somewhat healthy to make with a microwave and/or griddle? Thanks.

This recipe is from A Man, A Can, A Plan. They have another book called A Man, A Can, and a Microwave. It's a guy cookbook, but the recipes are really easy and some are really girl friendly cuisine.
Maizin Potatoes
Wash potatoes and prick with a fork a few times. Throw in the microwave and cook on high for about 8 minutes. Cut each in half and scoop out the insides. Combine with 1/4 low fat ricotta cheese, 1 tablespoon green onion, 1/2 teaspoon heb seasoning, and 2 cans (7 oz each) whole kernel corn. Refill potatoes skins and microwave on high for 90 seconds.

What about a toaster oven? Since you're bringing a griddle and you're not allowed to have that either why not? It's a mini oven! Yum cookies! With a fridge, microwave, griddle and toaster oven you'll be set! Just don't start a fire, everyone in the dorm will hate you for getting them out of bed at 3 am :) A small fire extinguisher might be a good idea too. Also a mini crock pot might be a good idea if you like stews and soups!

Chili is super easy to make and you could probably do it in a microwave. I usually use red beans, black beans, corn, diced tomatoes, chili powder, and ground meat. I'm not sure if you could cook the meat on your griddle, but you could use sausage or chicken or something instead. All of the veggies are canned, which makes things easy. Put them all in a bowl and microwave, stirring frequently. The fun part is that you can add as much of each as you want so that it tastes great.
You could also buy those bags of microwave-able frozen veggies. I've seen things like corn on the cob and all types of mixed veggies that you can buy and microwave. Mix them with some ramen noodles, rice, or some kind of sauce and you'll still have a pretty healthy meal. Or add veggies to some of the meals other people listed, like mac and cheese. It seems weird but can turn out to be delicious! There is a huge variety in what you can make since there are so many types of veggies and so many things to add to them!

Wafflewich
You mix together peanut butter and marshmellows and stick it in the microwave and mix some more.
Toast two waffles and then put the mixture in between them making a sandwich.
Then drizzle with honey.
