Up here in Iowa, I know of many who swear by chicken livers and various "stink" baits for channel cats. Nightcrawlers also work but then you will have other fish to deal with (like carp and other rough fish).
I also use minnows or chubs for bait. You might hook on some of those nasty walleye or an occasional bass, but you can always throw them back. LOL! Seriously, if there are flathead cats in the area where you are fishing, live baits are the way to go.
I have heard of others even having good luck with small frogs and even crawdads. The big thing is to not keep chubs or minnows in the same bucket as the crawdads -- the chubs will not survive long, I forget why but it is not from injures but something chemical.
We have the best luck with cats about an hour before sundown and for a couple hours after. Early morning is also good too. If you are fishing a river, then work on brush piles for flatheads and in the shallows where the fish will come up and feed for the rest. I don't do much pond fishing so I can not give too much advice there.
Knowing that most true fishermen will not give away all their secrets, giving advice is hard. And, it make a difference what type of water you are fishing and what type of tackle you are going to use to really be able to give good fishing advice. I could tell you where and how to fish cats on the rivers here in Iowa, but that may not work in New Mexico. Same goes with baits and tackle used. But I hope this gives you something to try to see what will and what will not work for you.

It doesn't matter if you don't have a boat ... I don't have one either. I make a carp bait, and i have caught 2 channel catfish off of it, my dad has caught around 4 or 5 with it. Here is the recipe from where i answered a previous question - http://answers.yahoo.com/question/index;_ylt=An9l8...
I have heard good things about chicken liver too. Yes, night fishing is the best for catfish.
