Yes.
For all PS3 games, the platinum trophy means you got every single other trophy available for that game.
EDIT: Oops. The general Platinum rule is that it's every trophy *except for DLC trophies*. For RE5, all the multiplayer trophies were added as part of the DLC so they don't count for getting the Plat. For GTA IV, there are no DLC trophies, so you do need them all.

when you start a game it sometimes has ps3 trophies. when you earn one a little thing pops up in the corner with the name and picture of trophy. you can check trophies in your trophy collection. to get a platinum trophy you must get all other trophies. this is the same for all other games.
