The door is open for so many possible career paths. Here's a few;
1. Teaching: All levels, from kindergarten to PhD
2. Research: Writing papers, books, making films/documentaries, Museum work
3. Language: Often you get the chance to learn languages as part of your course, which opens the door for a LOT of things; United Nations, Translator, TEFL (teaching English as a foreign language), even big business like Oil Companies and Banks need translators!
4. The British secret services actively recruit anthropology graduates from the top British Universities, especially those with....Language Skills...
5. The U.S. Army has recently recruited Anthropologists to help understand local people in "troubled" areas.
There's a whole world of opportunity!

While it is not easy to find some jobs in the field there are many you can get in to. Anthropology is a well-rounded degree and can get you started in many fields. If you want to stick with something closely related you can work at a university, museum, research center, on an archeological dig, etc.
With an masters you can teach at some community colleges and with a phd you can teach at a university and conduct your own research at a university, museum or other institution
It really depends on what you are interested in and which subfield you focus on

You can work as a researcher, you can work in your local county's archaeology department, you can work in a museum (curator, education, exhibits specialist), you can write books, papers, lecture, you can teach be they little kids or senior citizens (let me tell you there is quite a demand for Senior continuing education!)
You don't need a Ph.D. to acheive a lot of these, I've known some very well respected Archaeologists/Anthropologists with just a Masters! Try to get that Masters though, but right out with a BA you can try to contact your local Archaeology deparments or the university to see if there are any paid internships available!
Good luck and have fun with it!

You can investigate mass graves for the United Nations. As for which degree, I don't know. Probably a BA to just work on it, at least an MA to be in charge of it.

When I graduated with a BA in Anthro I was offered a job in a museum. I instead took a job teaching elementary school.
Many employers are only interested in whether you have a degree of any type.
