How many skewers of chicken is a serving?

I want to make chicken satay(just chicken on a stick basically) and I am curious as to what a single serving is. Two skewers? Three? One?

    you can used many options.

    # 1

    3 chicken breasts, boned and skinned

    1/4 c. soy sauce

    3 tbsp. dry white wine

    2 tbsp. lemon juice

    2 tbsp. oil

    3/4 tsp. Fines Herbs, crushed

    1/2 tsp. grated ginger root

    1 clove garlic, minced

    1/4 tsp. onion powder

    Dash of pepper

    I use a combination of my favorite herbs to equal 3/4 teaspoon.

    Cut chicken into pieces 1 1/4 inch wide x 1/4 inch thick. Thread loosely on skewers. Marinate 2-3 hours in the rest of the ingredients. (I think the taste is fuller if you marinate overnight.) Grill over hot coals 3-4 minutes per side or broil indoors. Baste with leftover liquid.

    2 whole chicken breasts (boneless)

    8 green onions (or 1 lg.)

    1 green pepper

    1 clove garlic, crushed

    1/2 c. soy sauce

    1/2 c. dry sherry or white wine

    1/8 c. beef broth

    1/2 tsp. sugar

    1 tsp. ginger

    Combine "last" 6 ingredients as a marinade; set aside. Skin chicken and cut into 1 inch cubes, cut onion into pieces, cut pepper into squares; place in marinade and leave for 1 to 2 hours before cooking.

    Thread meat, onions and peppers onto skewers. Broil in oven or over charcoal grill. Brush with marinade while cooking.

    Makes 4 servings. NOTE: This is a very tender meat and vegetable, will melt in your mouth.
