Is there a way to know how "booked" a hotel really is?

Percentage wise? Las Vegas

    Some booking sites like www.booking.com show how many rooms are left for your date selection so that can give a rough indication.

    You might be able to check it via http://www.beginbooking.com/ as well. This sites compares the rates of 30+ booking sites which gives you a good idea of the available rooms and average booking rate.
