deviled eggs from too fresh of eggs?

you know how if the eggs are too fresh they won't peel smoothly. isn't there some little trick or something you add to the water to solve this?

Update:

no, no i know how to make deviled eggs. i'm talking when the chicken just layed the egg yesterday. the shell doesn't break away from the egg as smoothly as when they're a couple weeks old and bought at the supermarket.

mike: at one of the farms down the road. they are a little cheaper there and i'm having a bbq on sunday so i need a lot. they will sell them out of a fridge along the side of the barn to the public. then on sunday whatever hasn't sold the farmer will drive the leftovers to the egg company. that company will than sell them to mr. grocer. mr grocer can let them sit for another week or more in his cooler before you take them home.(i work at a grocery store when i'm not on mat leave) my sister is acctually one of these farmers. i could phone her and ask her but that would envolve a half hour conversation and i falsely thought this would be much quicker. i was thinking it was like a tsp of vinegar in the water or something. i guess i'll call her.

    giggle giggle!! after more than 50 years in the kitchen I still can't peel really fresh eggs nicely. If you are planning deviled eggs, you must just plan that much ahead.

    I actually do this:

    Empty the boiled water from the pot.

    Run cold water into the pot for a few minutes or however long I want to waste water for...

    Turn the water off, but DONT empty the pot. Peel the eggs UNDER the water.

    Empty the water out after all eggs are peeled, the majority of the eggshell will stay in the pot for me to tip into the trash.

    I always find peeling them under the water helps a heap.

    When the eggs are done boiling, put them in freezing cold water. This will force the inside of the egg to shrink just a bit and will make peeling a breeze!

    how did you get fresh eggs

    commercial eggs are several days old before they get to the store

    I watched those EB superior eggs sit a whole week on the shelf

    Look at this You added the information

    but I still believe if you crack the shell in running cold water is will separate the membrane easier

    I take a butter knife and use it to crack around the entire shell. Doing it this way, I have never noticed a difference between a fresh and an older egg.

    After you boil them, put them in ice water and crack them all around, after a minute peel them.

    Just let them boil to they hardened theres no real trick.
