A nice meal for three people that's not too intricate?

I've been going through a bit of a rough patch and a mate and his dad have really helped me out a lot and I'd like to show my appreciation by cooking dinner for the three of us tomorrow, any suggestions?

    This dish is really good and best of all you will have some leftovers.

    Baked Ziti

    • 1 pound dry ziti pasta

    • 1 onion, chopped

    • 1 pound lean ground beef

    • 2 (26 ounce) jars spaghetti sauce

    • 6 ounces provolone cheese, sliced

    • 1 1/2 cups sour cream

    • 6 ounces mozzarella cheese, shredded

    • 2 tablespoons grated Parmesan cheese

    DIRECTIONS

    1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.

    2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.

    3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

    4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

    Rissole:

    • 3 large potatoes, peeled and cut into 1-inch chunks

    • 2 tablespoons grapeseed oil (as needed to saute the onion and rissole cakes, respectively)

    • 1 medium white onion, diced small

    • Salt and freshly ground black pepper

    • 3 scallions, white and tender green parts only, sliced on the diagonal into 1/4-inch thick slices

    • 1/2 pound cooked backfin or lump crabmeat (avoid canned)

    For the rissole, boil the potatoes until soft, and drain well.

    In a saute pan, heat 1 tablespoon of the grapeseed oil over medium high heat in a large skillet, reserving the other tablespoon. When it begins to shimmer, saute the white onion until tender. Transfer the onion to the potatoes which have been boiled for the rissole, reserving the saute pan. Season potatoes, to taste, with salt and pepper, and mash together. Fold in the scallions and crab trying to avoid breaking up the crab. Allow to sit until cool enough to handle, then use 3-inch circle cutters as molds and form the potato/crab mixture into circles. In the same pan, heat additional grapeseed oil for the rissole over medium-high heat and sear the potato cakes leaving undisturbed for the first 2 to 3 minutes on each side to let the caramelization process begin and to prevent the cake from breaking apart. When you see the edges of the cake beginning to turn golden brown, flip and sear the other side. Then cook further until the cake is firm. Remove from heat and keep warm.

    Well, here is one easy dish that I cooked for my siblings and parents... It was quick and easy, not really that complicated.

    Chicken Parmigiana

    Chicken Breast (pcs can vary on what you serve)

    Eggs 2 pcs (Scrambled, enough to coat chicken)

    Flour 4 Tbsp (enough to coat chicken)

    Breadcrumbs (enough to coat the chicken)

    Salt and Pepper

    Canned Tomatoes (diced, 1 can is enough to cover 4 people)

    5 pcs Minced Garlic cloves

    1 whole onion (Minced or Sliced)

    1 Tbsp tomato paste

    1 Tbsp chopped basil

    1 Tbsp Sugar

    Mozzarella or Parmesan Cheese

    Directions:

    Chicken:

    1. Season chicken breasts with salt and pepper, then coat in the following order:

    Flour

    Egg

    Bread Crumbs

    2. Deep fry in oil until golden brown (note: olive oil can burn fast, vegetable oil can be better, it's up to you

    3. Set aside on plate covered with a paper towel to drain off excess oil

    Sauce:

    1. Heat up saucepan with olive oil, saute garlic and onion until soft. Add tomato paste and continue sauteing to remove acidic/sour taste. A good think to check is the onions, if they are translucent and they absorbed the red color of the tomato paste

    2. Add canned tomatoes, bring to a simmer then add sugar, salt & pepper. Add chopped basil afterwards.

    Continue cooking and taste if you want to adjust the seasoning- Cook for 10 minutes

    Plating

    Put chicken on a plate, cover with the sauce on top, add grated cheese and serve

    one of my favorite dinners to make - delicious & impressive but very easy - is pasta alfredo with bits of sauteed chicken and steamed broccoli or spinach. i use the "easy alfredo" recipe on allrecipes.com for the sauce, but a traditional alfredo sauce is pretty easy to make as well. for the chicken, just cut into bite-sized pieces, season as desired (i like garlic salt, black pepper, and italian seasoning), and cook until done in a frying pan with some olive oil. then steam some broccoli or spinach and cook the pasta. mix together the sauce, pasta, chicken, and vegetables, serve with some garlic bread and salad, and voila!

    Cut up some chicken into cubes, marinate it in the sauce of your choice, then stick it on kebab sticks with some mushrooms, peppers, onion chunks & small tomatoes. Cook it slowly under the grill & serve with rice.

    Job done.

    I haven't tried this but always think it looks like a good informal meal to share http://www.jamieoliver.com/recipes/lamb-recipes/ba... and of course the lamb chops don't have to be barbecued. But it would be nice to have something in the middle of the table for everything to help themselves to.

    If that doesn't appeal a good informal dinner is tapas http://www.spain-recipes.com/spanish_tapas.html . Make a few hot tapas dishes like garlic king prawns, patatas bravas and sherry mushrooms and before you can prepare cold dishes like plates of cold salami, bowls of feta salad, a bowl of salted almonds and plates of crusty bread with olive oil to dip in. This is nice and informal and easy to just put all the dishes out and let everyone help themselves.

    Vegetable is not really a medical term, it is a cooking term. So the qualifications to become a vegetable are not very coherent, which is why we have cases like the tomato: people argue both ways.

    if they eat steak you could always go to your local butcher shop and pick up some steak or a supermarket and then marinade it or you could serve it plain. i usually go about 1/2 pound per person . then make 3 baked potatoes and some green beans or rice or you could do squash qhatever you think for a good side dish
