The Colonel's herbs and spice recipe?
Recently on TV in OZ there was a show which professed to have someone who was declaring the HFC herbs, I missed the show, did anyone see it and could you tell me what they are? please

Hi Val, David from Canada here, Ironically I worked as a youth at KFC outlet here in Canada, and the first fellow is right, it is a matter of the combination of the spice and herbs, one thing is black pepper, and the flour coating came pre-packed in a 20lb bag, we used solid shortening but now they use liquid veg oil and the cookers work with pressure like a stovetop one, the Colonel used home cookers with a whole drilled in them and a fry thermometer to register the temp, I have seen pictures of him cooking with them, and the original were don on a gas stove, now they are all electric and timer set.
Also to replicate it you need powdered spices, thyme, oregano, celery salt, paprika, onion powder, salt, fine ground black pepper and a bit of garlic. A 30% plain flour, 30% cornflour not the one you think but like for US tortilla's and finally some barley flour 30%.

Google KFC recipe. The hard part is not the exact combination of spices, but the prep and cooking. You have to use the right anmount of flour and moisture to get the breading to stick. And use the right fat at the right temperature. Experiment. At home, you can make better chicken...or you can screw it up.
1 good chicken (Kosher or 'natural' chickens are usually best), cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat.
AND
1 tablespoon curry powder
1/2 teaspoon ground allspice
OR
fines herbes mix:
1 tsp chopped tarragon
1 tsp chopped chervil
1 tsp chopped chives
1 tsp chopped parsley
(or any combination of the above, plus whatever else you fancy)
PLUS
1 - 2 cloves garlic, minced
1 tsp cayenne pepper (more or less to taste)
1 egg
1 cup flour
Salt and pepper to taste
Enough oil or lard to fill skillet to a depth of about 1/2" - lard, lard and butter combined or vegetable: Crisco shortening, corn, canola, peanut. Canola or corn oil imparts the least flavor, lard the most. Crisco shortening seems to result in the 'crispest' chicken. Canola is considered the healthiest.
