Ripe Jalapeno Peppers? When do I Harvest?

I have some Jalapeno pepper plants growing in my home garden, but I don't know when is the right time to harvest them. I've tried various web searches, but all of them had conflicting ideas. What I want to know is do I harvest them when they are green and let them ripen off the plant? Or do I wait for them to ripen on the plant?

Update:

when I say "ripen on the plant" I mean wait till they turn red in color.

    Either way; green or red.

    I harvest most of mine when they're green, but inevitably, a few will be sneaky and turn red on me. I like to have a few of those sprinkled in when I make pickled sliced jalepeno peppers...just for the color variation.

    Traditionally, they are harvested, and processed or otherwise consumed, while still green.

    Jalapeno peppers are green. I've always taken a bite to find out if they are ripe. I've found the longer on the plant the hotter.

    What I truthfully have finished is merely lay them out in one layer on paper,in a dry no longer humid section.one greater mattress room or notwithstanding works for you. whilst dry,shop in jars or zip loc luggage.Besure they are thoroughly dry till now storing.whilst dry you additionally can grind them finished in a coffee grinder to make powder. have relaxing.... and make some Jalapeno pepper jelly.it is so superb at Christmas. unfold cream cheese on a Ritz cracker then maximum suitable suited with a sprint warm jelly.crimson or eco-friendly and the two look the two superb on an appetizer attempt.
