Is the mold appearing on the mature Cheddar cheese in my fridge ok to consume?

Is it just maturing, similar to say, blue vein or should i throw it out? i don't want to make myself sick.

The mold will probably not hurt you, but it will cause the cheddar cheese to taste very off and odd. I cut it off, if it is just starting. IF it is very bad and thru out the cheese I toss it out.

Blue and Roguerfort cheese is a different type of cheese made with different milks and or different cultures to make it taste and mature the way it does.

No, don't eat it. You can cut / scrape it off and eat the cheese underneath but even that will be going past its best. Don't eat mould.

I cut away the moldy layer but use the rest.
