Combine flour, some chicken stock powder, mustard powder, dried oregano or sage or italian herbs and black pepper. Be generous with the herbs because chicken can be rather bland. When you sniff the flour and can smell the herbs, that should be enough. Add a quarter the amount of mustard powder as the amount of dried herbs (ie 1 tablespoon of mustard powder for every 4 tablespoons of dried herbs).

Ensure that the chicken wings are thoroughly dry by patting down with kitchen paper. Dredge the chicken wings in the seasoned flour, ensuring that all the folds of the chicken wings are well covered with the flour.

Lightly grease a baking tray or line with grease proof and lay the chicken wings down on the tray in a single layer, stretching out the wings so that the floured folds are exposed. Leave space between each wing so that there is even hot air flow and the wings don't stick to each other at the initial cooking stage.

Bake in an oven preheated to 200oC for 20-25 mins until the chicken wings are cooked, turning once or twice to ensure that the wings are evenly cooked and golden all over. Squeeze some fresh lemon juice over the wings just before serving.

Chicken wings are full of fat - the flour will make the wings nice and crisp with a lightly crunchy coating. If you want to make the crunchy coating thicker, dredge the wings again in the seasoned flour after baking for 10 mins when the oil starts coming out of the wings.

This is so easy, you'll think, "How can anything so good, be so easy?" Here's what I do...

Preheat the oven to 475°F to 500°F.

Rinse the wings and blot dry with paper towels. Put them in a big wide shallow silver bowl (like the ones in restaurants) or use a plastic bowl with a lid. Salt and pepper the chicken and toss to evenly coat the chicken pieces or use the plastic bowl with a lid method.

Take a broiler pan or a sheet pan with a wire grate to fit in it (spray with Pam Cooking Spray) and lay the chicken wings out evenly.

Put in oven on the lower shelf and roast for 20 minutes; they should be done now.

Remove from the oven and enjoy. If you like, you can spoon a little BBQ sauce over each wing and return to the oven for another 5 minutes, but they are good with just the salt 'n pepper seasonings. They are also good with Lemon Pepper seasonings too.

You don't need a deep fryer to make fried chicken. Just cover each thawed wing in flour and fry in olive oil (to be healthy) in a stove top skillet.

First spray your cookie sheet & cooling racks w/Pam.

Second different versions of the same thing:

Place wings in large zip lock bag or bowl

Third, coat very well with BBQ sauce AND/OR Hot Sauce (tabasco).

Let them sit for an hour or so, place them on the rack (which is over the cookie sheet) and bake till done.

Cut them up...like into drumettes and wings. Coat them in BBQ suace or Buffalo wing sauce. Bake them in the oven on 350 for about an hour. Yummy baked hot wings!
