How would you cook a side of salmon?

It looks very tempting in my local Tesco, but I would like some different ideas on what to do with it.

    Ingredients - serves 4

    •4 large ripe beefsteak tomatoes, seeded and chopped

    •50g/2oz fresh basil leaves, chopped

    •25g/1oz fresh mint leaves, chopped

    •Sea Salt & ground black pepper to taste

    •300g/11oz cooked Farfalle pasta (or any other suitable pasta shape)

    Method

    In a bowl mix all of the ingredients together.

    Season to taste.

    This tasty side dish goes well served with poached, grilled or fried salmon.

    The best and easiest way to cook a side of salmon would be to wrap in tinfoil with some lemon, butter and herbs and roast in the oven.

    I'd recommend looking at the BBC Recipe site for some easy to follow ideas for roasting salmon.

    cut a large piece of foil and set the salmon on top of it slice a lemon and arrange the slices on the salmon, sprinkle some salt, drizzle some olive oil not too much because salmon contains already oil, a bit of black pepper, some fresh Dill and wrap the foil forming a pouch place in a preheated oven on top of a cookie sheet and bake for 45 minutes at 350F.

    slice in into 2 inch thick fillets/steaks

    THAI SALMON

    for marinade (for 2 fillets)

    1 lime zest and juice

    approx 15-20g fresh root ginger

    3tbsp clear honey

    2tbsp sesame oil

    mix the above together and marinade the salmon in it for about half an hour. remove the salmon from the marinade. heat 1tbsp veg oil in a frying pan and cook in a frying pan. hot at first then reduce the heat (according to your instructions with the salmon).

    a couple of minutes before serving add the left over marinade to the pan and let it reduce.

    we normally serve with cous cous and veg

    I might put it in a marinade of olive oil fresh lemon juice a few black olives salt pepper and some fresh parsley chopped then cook it on a bbq and serve with a mixed green salad.

    Or cook it in the oven in olive oil, white wine salt and pepper and cherry tomato's

    I cooked them over the grill on an applewood plank crusted with chopped fresh herbs, garlic and lemon slices.

    Put some blobs of butter on it ,wrap in foil and bake in the oven 'til it's cooked,this won't take long.Afterwards there are loade of things you can do with it,Fish cakes,butties,fish pie etc etc
