Idea of what to go with Mexican cornbread.....?
We are having a pot luck at work on Wednesday. Everyone has a tendency to bring chips, dips and desserts. I try to bring entrees because of this. Everyone here loves Mexican cornbread so I am bringing that but I also need ideas for the entree to go with it.
I've thought of beef vegetable soup or pintos. Not really sold on those ideas. I need ideas that will feed around 30 people and is cheap to make. Also, no chili. It is in the 90's here and several people don't like soups or chili in that kind of heat.

a casserole:
cheesey taco bake
1 pound Velveeta cheese, cubed
1 onion, chopped
2 cans rotel tomatoes
2 cans green chilies, chopped
1 can evaporated milk
2 cans campbells nacho cheese or regular cheese soup
2 pound hamburger,browned and drained
4 cups cooked rice (white, yellow, whatever you have)
saute onion till soft. add cheese, tomatoes, chilies, milk and soups and heat just till velveeta melts. add browned ground beef. pour on to rice in an oven proof casserole dish. top with shredded cheese (cheddar, pepper jack, co jack or white mex cheese) bake at 375 F for 25 min. top with crushed frito chips if desired.
* if you need to stretch the recipe you can thrown in a can or two of drained corn or mexicorn. its a nice addition.
