Photos will appear sharper on glossy paper but the shiny surface will reflect the light and cause some glare when you're viewing them. Professional photogs prefer glossy for the sharpness.
Matte finish paper does not reflect light but the image won't be quite as sharp. They're not super blurry or anything but just slightly less sharp if printed on matte paper.

Gloss paper is glossy/shiny (like your photographs, before digital cameras came out).
Matte isn't shiny/glossy.
I prefer matte, because you don't get any sun glare if you move your photos around (if you know what I mean). They're better if you're thinking of framing your photos :)

Gloss is shiny and gives a better representation, but finger marks show really well on these. Matt has a textured effect that does cause wierd elements to appear, but will handle better.
If you want proper print get them blown up and printed on canvas/linen.

Well, the names should kind of give you a hint. Glossy has a more shiny reflective surface and matt does not. I prefer matt.
