I pulled a pound of ground beef out for dinner. What should I make with it?

    My friend makes a spectacular tex-mex version of shepherds pie.

    She makes a spicy ground beef by frying the beef with a tin of tomatoes an onion a chopped pepper and taco seasoning. Then she puts it in a caserole dish and tops it with polenta(corn meal) made so it's wet like mashed potato. Sprinkle on some grated cheese and bake until it's crispy. Serve with a salad and optionally all the usual taco toppings (salsa, guacamole, hot sauce).

    Lazy Cabbage Rolls

    INGREDIENTS

    * 2 pounds ground beef

    * 1 cup chopped onion

    * 1 (29 ounce) can tomato sauce

    * 3 1/2 pounds chopped cabbage

    * 1 cup uncooked white rice

    * 1 teaspoon salt

    * 2 (14 ounce) cans beef broth

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.

    3. In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

    1 lb. ground beef round

    1 can (14-1/2 ounces) zesty diced tomatoes, drained

    1 ½ teaspoons jarred minced garlic

    1 teaspoon Caribbean jerk seasoning

    2 large unpeeled baking potatoes, such as russets (8 to 10 ounces each)

    Salt, pepper and Caribbean jerk seasoning

    Topping

    ½ cup plain yogurt

    ¾ teaspoon jarred minced garlic

    ½ teaspoon Caribbean jerk seasoning

    1. Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into small crumbles. Pour off drippings. Set aside 1 tablespoon of the tomatoes. Add remaining tomatoes, 1 ½ teaspoons garlic and 1 teaspoon jerk seasoning to beef; bring to a boil. Reduce heat; cover and simmer 8 minutes, stirring occasionally. Uncover skillet; continue simmering 7 minutes, stirring occasionally. Season with salt and pepper.

    2. Meanwhile cut potatoes lengthwise into ¼-inch thick slices; pierce in several places with a fork. Dip in cold water; sprinkle lightly with salt, pepper and jerk seasoning. Place in single layer on nonstick baking pan. Broil 3 to 6 inches from heat 10 to 12 minutes or until tender and lightly browned, turning once.

    3. Combine topping ingredients and reserved 1 tablespoon tomatoes in small bowl; season with salt and pepper. Spoon beef mixture over potatoes. Serve with topping.

    We just had this yesterday...

    Meatballs

    1 can french onion soup with 1/2 soup can water

    1 lb burger

    1/2 C crumbs (I use cracker crumbs)

    1 T dried minced onion

    1 T parsley

    1 egg

    Mix 1/3 C soup mixture with the rest. SHape into meatballs and brown. Pour rest of soup over and cover and simmer about 25 minutes. THen, you can thicken the broth for gravy to put on mashed potatoes, or add more liquid to the broth and cook noodles in it.

    Well there's the ever popular meatloaf, but you could also make tacos, enchiladas, beef stroganoff, american goulash (very yummy over elbow macaroni), stuffed peppers, spaghetti and meatballs, or sloppy joes. Lots of different options to choose from.

    Really quick and easy. buy some spagetti and sauce. brown ground beef. cook spagetti. heat sauce. mix together.

    takes about 20 min.

    I'm making tacos; haven't had them for a while and they had a cheesy taco seasoning mix at the store that sounded good.
