Any good zucchini recipes?

I have zucchini bread and cake recipes up the wazoo...lol but...

What is the very best recipe you have for zucchini?

We have so much I'm trying to preserve it every way I can also.

    Check out the taste of home web site....my husband brought some home he had gotten from his boss and I made the cobbler below and it was wonderful....took it to a party and everyone was shocked it was zucchini!

    Zucchini Cobbler

    THIS IS my surprise dessert! No one ever guesses that the "secret ingredient" is zucchini. Everyone says it tastes like apples. This cobbler is a great dessert to make for a potluck supper or to serve a crowd. It's been requested time and again in my house, and I'm always happy to make it. -Joanne Fazio, Carbondale, Pennsylvania

    Ingredients:

    8 cups chopped seeded peeled zucchini (about 3 pounds)

    2/3 cup lemon juice

    1 cup sugar

    1 teaspoon ground cinnamon

    1/2 teaspoon ground nutmeg

    CRUST:

    4 cups all-purpose flour

    2 cups sugar

    1-1/2 cups cold butter, cubed

    1 teaspoon ground cinnamon

    Directions:

    In a large saucepan over medium-low heat, cook and stir zucchini and lemon juice for 15-20 minutes or until zucchini is tender. Add the sugar, cinnamon and nutmeg; simmer 1 minute longer. Remove from the heat; set aside.

    For crust, combine the flour and sugar in a bowl; cut in butter until the mixture resembles coarse crumbs. Stir 1/2 cup into zucchini mixture. Press half of remaining crust mixture into a greased 15-in. x 10-in. x 1-in. baking pan. Spread zucchini over top; crumble remaining crust mixture over zucchini. Sprinkle with cinnamon. Bake at 375° for 35-40 minutes or until golden and bubbly. Yield: 16-20 servings.

    Skillet Pork Chops with Zucchini

    My husband and I live on a small farm with our two young sons. We're always blessed with plenty of zucchini from our garden in summer, so I try lots of different zucchini recipes. This is one of my family's favorites.

    Ingredients:

    6 tablespoons all-purpose flour

    2/3 cup grated Parmesan cheese, divided

    3 teaspoons salt

    1 teaspoon dill weed

    1/2 teaspoon pepper

    6 boneless pork loin chops (3/4 inches thick and 4 ounces each)

    1 tablespoon canola oil

    2 medium onions, sliced

    1/3 cup warm water

    3 medium zucchini (about 1 pound), sliced

    1/2 teaspoon paprika

    Directions:

    In a small bowl, combine the flour, 1/3 cup cheese, salt, dill weed and pepper. Pour half into a large resealable plastic bag; Add pork, a few pieces at a time, and shake to coat; shake off excess flour. Set aside remaining flour mixture.

    In a large skillet, brown pork chops on both sides over medium-high heat. Top with onion slices; add water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.

    Place zucchini over the onion. Combine remaining cheese with reserved flour mixture; sprinkle over zucchini. Sprinkle with paprika. Cover and simmer for 25 minutes or until a meat thermometer reads 160°. Yield: 6 servings.

    Sausage and Zucchini

    This fast, flavorful dish appears on our table many times in summer when zucchini is abundant. The combination of zucchini, sausage and cheese is a real taste treat.

    Ingredients:

    1 pound fully cooked smoked sausage

    4 cups cubed zucchini

    2 cups chopped fresh tomatoes

    1/2 cup chopped onion

    1 teaspoon lemon juice

    1/4 teaspoon dried oregano

    1/4 teaspoon salt

    1/4 teaspoon hot pepper sauce, optional

    1 teaspoon all-purpose flour

    1/2 cup shredded cheddar cheese

    Directions:

    Cut sausage in half lengthwise, then into 1/2-in. slices; brown in a large skillet over medium heat. Drain. Add the zucchini, tomatoes, onion, lemon juice, oregano, salt and hot pepper sauce if desired. Cook for 15 minutes or until zucchini is just crisp-tender. Sprinkle with flour; toss to coat. Bring to a boil; boil and stir for 2 minutes. Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Yield: 6 servings.

    One recipe that is good..

    INGREDIENTS (Nutrition)

    * 1 1/4 cups white sugar

    * 1 cup vegetable oil

    * 3 eggs

    * 2 teaspoons lemon zest

    * 1/4 cup fresh lemon juice

    * 1 3/4 cups grated zucchini

    * 2 cups all-purpose flour

    * 1/4 teaspoon baking powder

    * 2 teaspoons baking soda

    * 1 teaspoon salt

    * 1 cup chopped walnuts

    * 1/3 cup confectioners' sugar for decoration

    DIRECTIONS

    1. In a large bowl, combine sugar, oil, eggs, lemon rind, and lemon juice; mix well. Stir in shredded zucchini.

    2. Combine in another bowl, flour, baking powder, baking soda, and salt. Gradually add this mixture to the zucchini mixture. Mix thoroughly. Stir in the walnuts.

    3. Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Cool.

    4. Sprinkle top with sifted confectioners' sugar and cut into bars.

    Another recipe that is good..

    Ingredients:

    * 4 small zucchini

    * 2 large tomatoes

    * 1/2 cup finely chopped onion

    * 3 cloves garlic, finely minced

    * 1/2 teaspoon salt

    * 1/2 teaspoon dried leaf basil

    * 1/8 teaspoon black pepper

    * 3 tablespoons olive oil

    * 8 ounces fontina cheese, shredded

    * 1/4 cup shredded Parmesan cheese

    Preparation: (much easier way to prepare)

    Heat oven to 350°. Grease a 2 1/2 to 3-quart baking dish.

    Cut ends from zucchini and cut in 1/2-inch rounds. Cut cores from tomatoes and slice about 1/2-inch thick. Cut each slice into quarters. Combine the zucchini and tomatoes; sprinkle with the onion, garlic, salt, basil, and pepper. Toss to blend; drizzle with the olive oil and toss again to coat the vegetables. Turn the vegetables into the prepared baking dish. Bake for 25 minutes. Top with cheese and continue baking for 10 to 15

    Depending on the size, you can slice, seed (if large) and blanch then put into freezer bags for future use. or you can lightly saute with salt, pepper, onions and garlic in a small amount of oil then cool and freeze, these are great heated in the microwave on low power, or stirred into spaghetti sauce or in casseroles. They make cooking bags for the microwave now that are great for veggies. you don't need to add any water so all the nutrients are still in the veggies, when they are done cooking season as you want. Don't forget to add some in your stir-fry too.My husbands favorite is what we call stuff in a pan. in a large fry pan heat a small amount of oil add thin sliced potato and onion, cook for a few minutes then stir in sliced zucchini and polish sausage that has been sliced into bite size pieces. cook until the potato's are done, season with salt and pepper.

    I have a couple others...like casseroles but for now just process the zucchini and freeze it! You can put it in the blender and have it ready for bread and cakes...you can shred it and have it ready for casseroles. Just freeze in 1 and 2 cup containers and you'll be ready for about any recipe that calls for zucchini.

    You can eat zucchini raw in salads, sliced in pasta sauce.

    You can slice long thin slices in a mandolin & make a lasagna.

    You can bake slices with tomatoes & cheese in a casserole.
