Is it difficult to make piccalilli?

I'm not that experienced in the kitchen, well that's not exactly true, been cooking without giving anyone food poisoning for a couple of decades now, just not very adventurous. Just wondered if it was worth giving it a go or would I be wasting my time as you need to already have an idea of what you are doing?

    no its actually quite simple - here is a recipe i like :)

    PICCALILLI (OLD-TIME)

    1 peck green tomatoes, chopped

    1 head cabbage, chopped

    8 lg. onions, chopped

    3 red or green peppers, chopped

    1 c. salt

    Chop together tomatoes, cabbage, onions, and red or green pepper. Add salt and let the mixture stand overnight. In the morning, drain off the liquid.

    Add: 1 lb. brown sugar 1/4 lb. mustard seed 2 tbsp. cinnamon 2 tbsp. black pepper 1/4 tsp. cayenne pepper 1 tbsp. whole cloves 1 tbsp. allspice 2 tbsp. ginger

    Make a spice bag containing cloves, allspice, and ginger. Boil above mixture for 30 minutes, stirring frequently to prevent scorching. Then seal the piccalilli in jars.

    1 qt Green Tomatoes, Chopped

    2 ea Med. Red Peppers *

    2 ea Med. Green Peppers *

    2 ea Lge. Onions,Peeled & Chopped

    1 ea Small Head Cabbage ** OR

    2 c Cucumber, Chopped

    1/2 c Salt

    3 c Cider Vinegar

    2 c Brown Sugar

    1 ea 3-inch Stick Cinnamon

    1 t Whole Cloves

    1 t Whole allspice

    1 t Mustard Seeds

    * Peppers should be seeded and chopped. ** Cabbage should be shredded. ~------------------------------------------------------------------------- Combine all the vegetables and the slat and let stand overnight. In the morning, drain the vegetables pressing out the juice. Add the vinegar, sugar and the spices, tied in a bag; bring to a boil and simmer until the vegetables are clear and the syrup is thickened. Discard the spice bag and seall the picalilli in hot jars. Makes 8 Pints. NOTE: ~---- One tablespoon each peppercorns and celery seeds may be substituted for the cinnamon.

    Sweet Green Tomato and Corn Piccalilli

    5 ea Green tomatoes, thin sliced

    2 tb Salt

    2 c White vinegar

    2 c Sugar

    1/2 ts Whole cloves

    1/2 ts Ground cinnamon

    Kernels from 3 ears corn -- uncooked 1/2 ea Red bell pepper, diced small

    1/2 ea Green bell pepper

    -- diced small 1 ea Red onion, diced small

    Rub tomato slices with salt and allow to stand overnight, covered and refrigerated. In the morning, squeeze the tomato slices between layers of cheesecloth to remove excess moisture. Set aside. In a large saucepan combine the vinegar, sugar, cloves and cinnamon. Bring to a boil. Remove from the heat. Add reserved tomatoes; stir well. Add the remaining ingredients and mix thoroughly. This piccalilli will keep, covered and refrigerated, several weeks.
