The control is what allows you to determine whether the variable affected the outcome of the situation. Without a control, no conclusions are possible.
For example, in testing a new drug for acne (the variable), one side of a person's face may be treated with the drug, and the other not. This second side of the face is a 'no treatment' control. When the pimples are counted on the two sides of the face, if there is a significant difference between the two sides, then having left one side untreated allows you to see if the treatment made the situation better or worse - or to see if there was no effect.

Well, anything basically. It really depends on the experiment you are doing. Time, temperature, age of the subjects, drug status, speed, friction, a catalyst, and on and on ...
