how long does an open thickened cream last. It is still within its use by date but was opened 7+days ago?

I want to use it to make my ganache

Update:

it's been kept refrigerated at 4- and not left out for any amount of time. I pour what is needed into measuring cups and return the unused portion to the fridge in its original container with the lid shut tight

    Pour some into your measurer and give it a sniff if it looks ok. It should still be ok, but you never know until you check it.

    That will depend on temperature & exposure to air. Test for sourness.
