With a large piece of meat and a Tri-tip roast being so dense and structure of meat, a marinade is pointless,it will not penetrate to the centre unless it is small roast and you let it go 2-3 days, a rub give you for a quick meal a better flavouring and crust, marinating also is for tougher cuts, if kept medium to medium well a TT can be very tender, well done is a bit chewy.

I have a friend that makes tri-tip and he marinades his for at least 2-3 days, 5 days max. But that is the best tri-tip ever. Chipolata and BBQ sauce w/ a splash of garlic. Slice thin and oh my. Works great for steak tacos or fajitas too.

I prefer marinades. They penetrate the meat more and the flavor seems to be more uniform.

How are you cooking it? I'm going to go with dry rub.
