Eggplant/Aubergine recipies that don't require baking....?
Would love to hear from all countries on what I should do with my eggplant this afternoon, I have two medium sized beauties. Love spicy foods so don't hold back. It's very hot in Brisbane today so anything that I don't have to fire up the oven for would be greatly appreciated. Thanking you x
Ideally, something I can do on the stovetop would be fabulous. Quick family recipies etc.

On the stove (not oven), fry up the following together
1 eggplant - quartered lengthwise, and sliced into 1/2 inch pieces
4 cloves garlic, peeled
1/4 cup olive oil, or as needed
then put it in this marinade and serve cold
1/4 cup red wine vinegar
2 tablespoons balsamic vinegar
1/4 cup olive oil
2 lemons, juiced
1/4 cup chopped fresh parsley
3 tablespoons chopped fresh oregano
salt and freshly ground black pepper to taste

I guess there's no way of getting around turning on the oven. I guess you really need to cook eggplant to make it taste good. Sorry. The good news is that all of these recipes can be changed to metric. Look underneath the servings.
