    Spaghetti Sauce

    6 onions chopped

    2 Tbls. butter

    4 cloves of garlic

    1 pound of pork sausage

    2 pounds of ground beef

    3 cans tomato sauce

    2 cans tomato paste

oregano, salt and pepper to taste

    2 cans of water

Cook onions and garlic, add pork sausage and brown then add ground beef and brown. Then add tomato sauce and paste, oregano, water and salt and pepper. Simmer 2 or 3 hours if possible.

Note: This recipe makes a lot of sauce, what I do is freeze what’s left.

    In a large skillet:

    Brown 1 lb ground turkey.

Drain and set aside (out of the pan)

Saute in the heated pan until onions are translucent but not brown:

    2 turns of olive oil

    1 small onion, fine chopped

    3 cloves garlic, minced

    1 bay leaf

    1 t crushed red pepper

    1/4 cup Italian seasoning

Add 1 can beef broth, deglaze pan, reduce heat

Add 1 can tomato paste or puree

    Add meat back in

Let the sauce simmer lid off until it has reduced

Add salt and pepper to taste

    Remove bay leaf

You can stir in some parmesan cheese if you like.

You can also cook any veggies you need to use up...carrots, squash, etc...then puree them and add them when you add the tomatos. If you boil them, save the water for cooking your pasta, it will be flavored!

The key is to give it enough time to simmer.
