    1. Arrange a layer of crackers on a microwave-safe plate, put bits of cheese on the crackers, cover the cheese bits with another layer of crackers. Microwave for about 15-20 seconds till the cheese melts. Gently press down the top cracker till the two crackers stick together. Decorate with a little icing or chocolate frosting (not too much, just enough to make it look appealing) and give it to her. My children dont like cheese much either and this worked.

    2. Put grated cheese in omelettes, tacos, burritos, and her favorite steamed vegetables.

    3. Make cheese sandwiches and cut with a cookie cutter to get various shapes like stars or circles.

    4. Pizza - most kids will eat pizza. I also make "breadizza" - toast a slice of bread, spread tomato ketchup and grated cheese on it, microwave till the cheese melts, sprinkle some oregano or italian seasoning, and voila!

To boost calcium intake, why not try some nice yogurts or parfaits? Parfaits are very quick and easy to make, layer some granola, berries and maple syrup and top with yogurt in a nice tall glass. Kids love that. And since yogurt is easy to digest and low-lactose, even children who don't like dairy will eat it.

You can also try calcium fortified fruit juices (not too much, they're also loaded with sugar).

Red beans and garbanzo beans are also good sources of calcium.

Have you checked to see if she is lactose intolerant? Maybe that's why she avoids dairy products.

Some of these recipes sound OK without using the soy milk and other strange ingredients. If this person doesn't mind things made with milk or other dairy products, you could probably doctor them up to make them taste really good. Just use these recipes as a guideline. http://dairyfreecooking.about.com/od/dairyfreebasi...

Muenster and Monterrey Jack are two very mild cheeses that go well with just about anything, and melt beautifully. If she likes eggs, try this frittata:
