Is there a way to extract an email address from Flash or Javascript contact forms?
I know nothing about this, but was hoping there is an easy way to do it.

In a word, no. The email address is set in the server, so your browser never gets it. The only time you'll see it is in a mailto: link - your email program opens with the address in it.
