Yes, I agree that Photoshop has many great tools. For what you are doing, you would use the "pen" tool which is something that creates what you call a "clipping path". This means you would create a "path" with the pen tool that enables you to "clip" what you need, out of the picture. Its tedious but when done correctly, creates exactly what you need to be done.

Another decent photo editing program is one my father turned me on to, called ACDSee. You might look into this one too.

Try Adobe Photoshop, it is very professional but costly. GIMP is easy to use though with a lot of features and it is free.

i work whith photoshop cs4 and its awasome u can do everything. first i learned the basics and than with some tutorials like those:
