Making pumpkin bread this weekend. Would like to substitute whole wheat flour for white flour?

Can I substitute it cup for cup or do I need to make an adjustment. Do you think the cooking time will be affected? Thanks!

You can substitute 3/4 c + 2 TBSP whole wheat flour for white. (That's the conversion Martha Stewart recomends)

Whole wheat flour is heavier and results in a denser bread.

    Two suggestions:

    1. Use whole wheat cake flour. It's finer and won't be as heavy. Then you can skip the 2 TBSP. OR

    2. If you don't have whole wheat cake flour, then sift your flour a few times.

whole wheat flour is denser then white and will make a heavier pumpkin bread but it can be substituted. If you are going to substitute all of the flour then use 7/8 cup whole wheat for 1 cup of white, if going half and half then do a 1 for 1 substitution.

Substitute half with whole wheat. I've had good luck with this method.

I don't suggest it, always follow baking recipes. Other recipes you can do some adjustments but I'd go the recipe

yes but it will be a tougher bread and it will take more work to form gluten.
