I really like the Golf Pride grips. They are durable and soft enough to use for long practice sessions.

I'm interested in the multi-compound grips from either Golf Pride or Sharpro (they're the same, but Sharpro owns the patent, and they're cheaper than the GP's).
I have Lamkin Performance Plus grips on my driver, 3 wood, and wedges, and I really like them. My driver grip is wearing away near where the thumb of my top hand is, but that's because, as I later found out, that I had been strangling the club with that hand. They allow a good amount of vibration through- enough to let you know you mis-hit it, but not too much to really sting you.

You should maintain the same grip pressure on every club under normal conditions. If you are in heavy rough or sand, you may want to use a firmer grip so as to control the shot. The heather on the course at the British open was a prime example for using a firmer grip.
