Which is the proper wine (white or red) to serve with:
Rabbit
Squirrel
Venison

organ meats like liver and kidneys
Also is it proper to serve white wine with all fowl or just chicken?

Generally the rule is that you serve white wine with white meat (Fish, Chicken, Pork etc) and Red Wine with Red Meat (Beef, Lamb). Red wine has a stronger, more dominating flavour so it is traditionally served with meats that have a stronger flavour.
So
Rabbit - White Wine
Squirrel - I presume white but never eaten it
Venison - Red
Goat - Red
organ meats like liver and kidneys - Red
Definitely white with chicken and turkey, but some game birds (Pheasant, Patridge, Grouse) have a darker meat and more flavour so you could serve a red wine with them.
