Both can be used but (soy vegetariana) sounds alot better

In spanish has a double meaning and could be both noun and adjective, for example:
1. The vegetarian has finished her lunch. La vegetariana ha terminado su almuerzo.
2. The vegetarian salad was done. La ensalada vegetariana fue terminada.

Soy vegetariana , sounds better. It's a noun

If you say: soy una vegetariana, vegetariana is a noun used as an adjetive
but if you say: soy vegetariana, here vegetariana is an adjetive
