What to take for potluck?

My companys Christmas party is coming up and we're doing potluck. Most people signed up to bring stuff but i havent yet. any good ideas? i was thinking of making sandwiches if you have any good ideas there.

Note: brownies, chili, potato salad, cookies, all those simple things are taken.

    These are to die for =) I even had a guest tell me "it's like a party in my mouth". They are very simple and easy to make. The only time consuming thing is cleaning out the mushrooms. I just use a wet paper towel to wipe them off. You can also buy mushrooms ready for stuffing at some markets (Meijers in Ohio has these) that are pre washed and ready for stuffing.

    Sausage Stuffed Mushrooms

    1/2 pound ground pork sausage (I chop mine up in the food processor so it's very fine)

    1 (8 ounce) package cream cheese, softened

    1 (8 ounce) package fresh mushrooms, stems removed

    DIRECTIONS

    Preheat oven to 350.

    Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and transfer to a medium bowl. I like to fry up garlic with my sausage and add onion powder to the mixture.

    Blend cream cheese with the sausage. Stuff mushroom caps with the cream cheese and sausage mixture.

    I also melt some butter and mix it with seasoned bread crumbs and grated Parmesan cheese. I then take the mushrooms once filled and dip it into the bread crumbs.

    Arrange stuffed mushroom caps on a medium baking sheet. Bake for 15 minutes and then put under the broiler for 2 minutes to brown.

    pepperidge farms makes little hamburger buns (i think they are called slider buns)

    you could buy some roast beef, and put a touch of creamy horseradish and top with slice of white (mozzarella) cheese.

    i've also made BREAD SUSHI (cooked smoked salmon and other things) here's my recipe:

    shrimp cocktail is relatively inexpensive to make and everyone loves that.

    if you have a (disposable) chafing dish with sterno, you can make (or buy frozen) mini meat balls and top with either BBQ sauce or spaghetti sauce.

    if you're adventurous, you can make mini sub's. Get some Italian bread loafs (preferrably fresh baked and very soft)

    cut down the center. (it it's hardened from fresh baked in this winter to your kitchen, you can bring it back to life by putting a baking pan with warm water on bottom rack of oven, and put the bread on the rack above it and heat up just a bit- you don't want it crunchy)

    then on bottom slice drizzle some italian salad dressing, on top slice some mayo

    then just put an assortment of deli meats and cheese (roast beef, turkey, salami, ham, sliced mozzarella etc) with some shaved lettuce (just take an ice burg lettuce, remove outer leafs and discard, then with a long sharp serated knife make thin slices)

    you can also put very thin slices of onions in the sandwhich too.

    then put it all together and wrap up in tin foil somewhat tight, refrigerate.

    right before serving or plating, slice up into 2 inch pieces. decorate with frilly tooth picks if you want

    you know that small dark rye bread (about 3 inches tall)? you can buy that then make sandwhiches using these ingredients:

    sliced or chopped up black and/or green olives

    WHIPPED cream cheese

    small amount of fresh parsley (optional) (chop it up very small, dry a bit on paper towels before using) i would not use dehydrated parsley

    diced up pimento's (they come in a small jar)

    very thin slices of cucumber

    mayo or miracle whip

    then make small sandwiches being generous with the whipped cream cheese

    top with frilly toothpicks and tiny cherry tomatoes or very very thin slices of zucchini or both

    you can make this same sandwich (with topping garnishment above) using baby salad shrimp too, but in this case i would not make with green olives or pimento's

    do a small plate assorted cold cuts sliced thin and cheese and a bag of rolls (buy whats on sale-)
