The WJC is being held in Saskatchewan, and the colour green is a homage/honour to Saskatchewan.
Team Canada wore them against the Swedes last night and plans to wear them once during the competetion proper.
A cynic might also add that it's the colour honouring the dollars people will spend to buy these sweaters.

I'm going to say it's because they're practice jerseys. Since that's the only time I've ever seen them wear green.
Edit: Figures, I don't see a game and they wore some. I stand corrected.
