Cookie Dough recipe for kids so they can use cookie cutters?
So I got this set of cookie dough cutters for kids. What type of cookie (and dough) are best? I remember when I was a kid my mom made a big batch of dough. And then used the rolling pin to flatten out and then we just cut into all kinds of shapes. I don't remember what type of these cookies are called as it requires somewhat dry texture so the dough can be rolled? Please share what you do! thanks.

Here's a good recipe:
Ingredients
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Directions
1.In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2.Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3.Bake 6 to 8 minutes in preheated oven. Cool completely

These are my absolute favorite sugar cookies! It is a recipe that my mother adapted from a couple of different cookie recipes. I hope you enjoy them! Merry Christmas! Christmas Cookies 2C Sugar2 Eggs 1C Butter½t Salt ½t Allspice1t Almond 2t Baking powder3C Flour Heat oven to 350. Baking time varies from 5-10 minutes or until lightly browned. Cream together butter and sugar. Add to the mixture, almond, eggs, allspice, salt and baking powder. Slowly add in flour. Either roll and cut out cookies or refrigerate and then “roll” into a log wrapped in waxed paper and then cut cookies.

use sugar cookies.
you can use any cookie mix available at most grocery stores,
add different colors to the cookie dough so that it will look like play dough.
Try searching yeolesweets on the web.
They have a lot of cookie choices/variations for inspiration.

Here's the recipe we have used for years in our family. It's great for kids, and they love to decorate the cookies after they have cooled! The dough does need to chill a few hours before rolling out. Makes 5 dozen cookies.
MARY'S SUGAR COOKIES (from Betty Crocker)
1 1/2 cups of sifted confectioners' sugar
1 cup butter or margarine
1 egg
1 tsp. vanilla extract
1/2 tsp. almond extract
2 1/2 cups of Gold Medal Flour
1 tsp. soda
1 tsp. cream of tartar
Granulated sugar (or colored sugar)
Mix sugar and butter. Add egg and flavorings;mix thoroughly. Stir dry ingredients together and blend in with wet mixture. Refridgerate 2 to 3 hours.
Heat oven to 375 degrees. Divide dough in half and roll 3/16" thick (a little less than 1/4-inch) on lightly floured pastry cloth or parchment paper. Cut with cooky cutter; sprinkle with granulated sugar or colored sugar. Place on lightly greased baking sheet. Bake 7-8 min., or until delicately golden. Makes 5 doz. 2 to 2 1/2 cookies.

Usually, it is sugar cookie dough that is used for cut-out. Make from scratch, or buy from the store.
A lightly floured board is required for roll-out, and, I have also used powdered sugar for rolling out.
A mixture of the two wouldn't be bad either.
Oh, and shortbread can be cut too.
