Where can I find a really good water stone or some other knife sharpening stone that doesn't require oil?

    Try your local department store or hardware store. Just ask one of the sales people there.

    I use a diamond coated sharpener for my work knives.

    The hunting/skinning knifes i finish the sharpening with a ceramic stone.

    I buy them online or at a hardware store. You can use oil or water on either of these, but you don't have to.

    There are two different types of stone, an oil stone or a wet stone,(whet stone). Most any good hardware, home supply or cooking store will have high quality ones available. Then most any department store that sell pots, pans, utensils, etc will have them, just a lessor quality.

    Any butcher will sharpen any knife for you, for free.
