I saw thousands of birds flying through the air in central NJ today.?
They were headed southeast. Could they be avoiding the cold?

It's very late for migrating birds going south to their wintering areas.
It's more likely you saw a flock of winter residents, probably European Starlings. They form very large flocks during the winter, as do other species (such as Blackbirds) and may be moving to (or from) a roosting area.
In southern California where I'm based, there are winter roosts of American Crows that have been tallied at in the low 10,000s. They move to the roosting area in late afternoon, and disperse from the roost in early morning.
Without knowing the species you saw, it's just speculation what the flock behavior represented.
