Most simply:
Matter-Energy Can neither be created nor destroyed. It can only change form.
Basically,
All that is, is.
In all of human history and recorded science there was never a single incident that led us to believe energy could be created or destroyed. It can change into the most gravity intense objects in the universe (Black Holes) but it is never destroyed nor created.

The total energy in the universe is constant.
If you gain one type of energy, that means that elsewhere there was a loss of another type of energy (a loss with a magnitude equal to the magnitude of your gain).
Typicall this idea is introduced with a math problem where change to kinetic energy correspond to changes in potential energy.
For fun, this can be done on a roller coast ride where your potential energy depends on your height and you convert potential energy to kinetic energy by losing height (going down the steep incline, screaming your head off) and gaining velocity.
