Recipe for a batter for fish or fritters?

I am after a recipe for making a batter for fish or fritters that will turn out brown and crispy.

    Basic Recipe

    100g (4oz) Plain flour

    2x5ml (2tsp) baking powder

    Pinch Salt

    150ml (1/4 pint) water

    1x15ml (1tbsp oil

    (1) Mix flour, baking powder and salt. Gradually beat in water and oil.

    (2) Deep fat fry in oil heated to180C, 350F.

    The batter should be thick enough to coat the back of a wooden spoon and the consistency of double cream.

    This crisp, golden batter is ideal for coating fish and vegetables e.g. Mushrooms, onion rings, cauliflower as well as fruit.

    Margie's Beer Batter for Fish

    Amount Measure Ingredient -- Preparation Method

    3 cups corn meal

    1 cup flour

    3 whole eggs

    salt and pepper -- to taste

    2 cans beer

    Mix dry ingredients, add eggs, then add beer until batter is at desired

    consistency. The thicker the batter the thicker the breading will be on

    the fish.

    Can be deep-fried or pan-fried. When pan-frying use a generous amount

    of oil, 3/4 of the fillet should be covered. Be sure oil (Crisco works

    best) is pre-heated to the point that the fish begins frying as soon as

    it is placed in the skillet. Test with drops of water if unsure.

    Fish is done when lightly browned on both sides.

    Title: Fried Fish Batter

    Yield: 6 servings

    1 ts Salt

    1/2 ts Black pepper

    1 c Cornmeal

    1 tb Sherry or brandy (optional)

    1 Jar prepared mustard

    Fish (Steaks, fillets or whole) Oil for frying.

    Heat oil until it pops when sprinkled with a drop of water. Pat fish

    dry, then brush with mustard, (mixed with sherry or brandy if

    desired). Sift cornmeal, salt and pepper into bag. Add 2 or 3 steaks

    or fillets, or 1 whole fish; close and shake. Drop fish carefully

    into hot oil; fry until lightly browned. Drain well on paper. Keep

    fish warm and crisp in a closed paper sack.

    Try fresh potatoes fried with the same batter. Tastes great!!

    1/2 teaspoon yellow Food Coloring -- optional

    2 tablespoons Corn Oil

    1 teaspoon Salt

    1 cup Flour

    1 teaspoon Baking Powder

    Combine water, food coloring, oil and salt. Gradually add flour, stirring

    rapidly with a whisk. Just before using, stir in baking powder. Dip fish

    fillets in batter and deep fry. This makes a very thick, crispy batter.

    The food coloring gives it a golden color.

    1 c Flour

    1 Egg

    1 tb Butter, melted

    1 d Salt

    1/2 c Beer

    This is good not only for vegetables, but for seafood

    and chicken, as well as for fruit fritters, such as

    banana, pineapple, and apple. Combine all ingredients

    in a blender or food processor and beat until batter

    is smooth. Let batter stand, covered, for 4 hours

    before using. Have vegetables well drained and patted

    dry if they have been washed. Dip in batter and fry in

    deep fat, 360 degrees, until golden.

    Mix beer and plain flour until it's a batter consistency. The alcohol in the beer will evaporate during frying.

    Just use a package of cornbread mix. Decrease liquid a little then drop by spoonfuls in hot oil or shortening.
