How can I make my mac 'n cheese creamier?

I really like the flavor of the mac 'n cheese recipe that I use. I made it for the first time tonight. It just turned out kinda sticky and...I don't know...pasty? How do I make it creamier?

1/2 chopped onion

2 Tbsp. butter

2 Tbsp. flour

1/8 tsp. pepper

2 1/2 c. milk

6 oz. shredded Cheddar

6. oz. American Cheese

2 C. uncooked elbow macaroni

Cook macaroni according to package directions. Drain and set aside. In a separate pot, cook onions and butter until tender. Do not brown. Add flour and pepper. Add milk all at once. Cook over medium heat until thick and bubbly. Add cheese and cook until melted and smooth. Add macaroni. Stir to coat. Pour into 2 qt baking dish and bake, uncovered, @ 350 degrees for 25-30 mins. (and that was all from memory! yeah!!)

So, should I add more milk or cheese? Also, I live at a high elevation, if that matters. Thanks for your help!

    Just before you put it in the oven add some cream and mix it in , then top the whole thing with cheese which helps to keep the moisture in.I use a penna instead of the macaroni.It makes it better .

    I think you should try adding a couple tablespoons of a thick cream, but if you do that add a little bit more cheese. If that doesn't work adding more milk may also work, but make sure you always add a bit more cheese when making it creamier because you want to keep the cheesy flavour.

    Hey at my culinary school we made a Bechamel-Mornay Macaroni and Cheese about 2 months ago for fun and to feed fellow starving students around the school and it was incredibly creamy and the taste was phenomenal. This is the recipe we used for our mac and cheese:

    4 ounces Oil

    4 ounces Flour

    2 quarts Milk

    1 each Onion Pique

    Salt and Pepper -- to taste

    Cheese – Grated (we used parmesan, white and yellow cheddar)

    Bacon - as much or as little as you would like to use

    Onion - about 3 ounces or so

    Leeks - as much as you would like to use

    Macaroni -- Cooked

    Heat milk with onion pique and aromatics. Simmer until it has developed stronger flavors from the onion pique and aromatics. In a separate pan create a roux with equal parts butter and flour, by weight. Remove onion pique from milk. Mix milk into the roux pan. Drizzle in the oil while continuously whisking. Continue whisking while mixture thickens.

    Sauté Bacon until slightly cooked. Add onion and leeks and sweat until translucent. Whisk in cheese to Béchamel a little at a time. Continue whisking until all the cheese is melted. Add bacon, onion and leeks and whisk it all together. Add cooked macaroni and mix it all together. Serve hot.

    after u cook ur macroni wash it off with cold wates n ptu a little more milk or try this recp boil ur macroni rinse off with water mix with cream cheese milk an a little salt n pepper it the best mac n cheese

    easy. don't use american cheese. It lacks that creamy taste. Use only cheddar, and lots of it!
