Help with making Truffles?
I tried making some truffles earlier and they totally didn't turn out and I can't figure out why. I made them last week and they turned out great so I don't know what went wrong this time.
I heated 1/2 cup of cream (low heat) and then added the chocolate (real milk chocolate Guittard brand). As I was stirring it the chocolate started to melt into the cream and then began to look a little grainy. I thought it just needed to melt more so I kept stirring and then it separated out. It looked like a bunch of melted chocolate in this oily liquid. I was really careful not to get any water in my chocolate. I have no idea what went wrong. Does anyone have any ideas? What would cause the chocolate to separate out like that?
the chocolate didnt seize, it separated.

I've had that happen and it turned out to be water on my whisk.
Was your bowl, spoon/whisk completely dry?
Even a drop a water will seize the chocolate.
