what is the difference between a New York strip steak and a Kansas City strip steak?

I see both in the meat department and don't know what the difference is. Which is better?

About 20 bucks! (drummer rim shot please)

Well, a little more seriously, the difference is in how they are cut. The aged beef in both cuts is probably the same. Look at them closely the next time you go to the store. The New York cut probably has less width (not thickness) while the length of the cuts will be very similar. A strip is cut from the bottom of a prime rib while a rib eye is cut from the bigger top section of the rib. Which one is better is entirely up to the subjective judgement of the person eating it.

The difference is not in the way they are cut. They are both cut the same....and they may be the same exact steak with just different names...or they may not be.

A Kansas City strip steak is corn fed beef only.

A New York strip steak is the exact same cut and could come from a corn fed cow or it could be from a grass fed cow.

Which is better is personal taste only. I personally prefer the corn fed beef but the grass fed is slightly better for you.
