how do you call the "quarter=80" for example the time mark "metronome" of the piece?

I need to know how it is called not "time signature" because time signature is 3/4, or 6/8 etc.

the symbol of quarter=60

or half=80

that is the amount of figures in one minute..how is it called???

    The tempo, or beats per minute (bpm).

    I think your referring to tempo. Tempo is usually in Crotchets beats per minute or quaver beats per minute (BPM).
