So, there is Sam-I-Am, but what is the name of the one who does not like the green eggs and ham? My son asked me the other day, and it as got my wondering. Also, what is the name of the man white the yellow hat? Thank you.

According to wikipedia he is simply "Unnamed Character". I never thoughtt about it either!

man with the yellow hat from curious george doesnt have a name...he's only known as "man with the yellow hat" and as for green eggs and ham... he doesnt have a name either!...wierd i never thought about it lol
EDIT: ok so i just found out in the 2006 movie...he's called ted.
and grn eggs and ham is unknown

For some reason I thought it was the Cat in the Hat! HA! Now that I look at the book again I guess I'm wrong!
In the Curious George cartoons and books he is only referred to as "his friend" or the "Man in the yellow hat". IDK if the recent movie gave him an actual name or not but it was not inherent to the original book series.

"Man with the yellow hat" IS his name, lol. I am not sure about green eggs and ham, but you should make your son some (with food coloring) as a surprise sometime. They look gross but I am sure he will be excited! (or repulsed :)).
